WAV or MP3: which one do you need?
WAV stores sound as uncompressed PCM samples. Nothing is thrown away, so the file can be edited, cut and saved again without a further loss of quality. That is why audio editors, video editors and speech-to-text tools prefer it.
The audio inside an MP4 is normally compressed as AAC. Converting MP4 to WAV does not bring back what that compression removed, but it avoids compressing the sound a second time, which is what happens when you convert to MP3.
The price is size: a WAV file is about seven times larger than a 192 kbps MP3. If you only want to listen to the audio, convert the MP4 to MP3 instead.

Questions about converting MP4 to WAV
Does WAV sound better than MP3?
A WAV made from an MP4 keeps everything that is in the video, while an MP3 compresses it a second time. You will mostly notice the difference when you edit the audio, not when you just listen to it.
Which sample rate and bit depth do I get?
16-bit PCM at the sample rate of the video, usually 44.1 kHz or 48 kHz, with the original number of channels.
Why is the WAV so much bigger than the MP4?
Because it is not compressed. One minute of stereo audio takes about 10 MB as WAV, whatever the length or the quality of the picture was.
